To build this year's Miracle, we took one of our favorite natural process coffees and blended it with a washed lot from a collection of farms in the same community. The result is a delightful presentation of beautiful fresh crop coffees all from the municipality of Marcala, Honduras:
Finca San Francisco
Finca San Francisco is one of three parcels of land inherited by Roger Domínguez from his father. This lot consists entirely of red bourbon, an older, tall-growing variety with very high potential for quality. Excellent agronomy and picking standards followed by meticulous natural processing deliver an exceptionally vibrant, jammy, and fruity flavor profile.
Marcala Community
This lot is the combined production of numerous small, neighboring farms in Marcala. Fully washed, and consisting of a mix of varieties typical of the region, it brings a sweet and structured base with subtle notes of brown spice, red apple, and citrus.
Although Honduras has had a relatively recent start in its specialty coffee production, Marcala is already known to be a source of excellent quality, boasting the first protected "denomination of origin" in coffee. We're thrilled to showcase this wonderful region in this year's composition of Miracle.
